Bourbon Beans

Posted this in answer to a question on another thread and it was suggested I post an original to make searching easier, so here it is:

Can't beat Bourbon Beans for a backyard event.

Take 4 cans of your choice baked/Boston beans and combine with 1/3 cup of chili sauce
tsp dry mustard
tbs molasses
1/2 cup plus a splash of your choice Bourbon (don't be shy)
1/2 cup strong coffee
mix it all together and cover with cloth let sit at least 3-4 hours, we prefer overnight. Then bake at 375 for approx 40 minutes. We put sliced apple and cinnamon on top, others do sliced pineapple and brown sugar for an additional 40 minutes.

Jim, just to make sure I understand the instructions. You bake the beans for 40 minutes, then top them with whatever fruit, and bake for another 40?

Yes. Also those were 16oz cans of beans. I keep most of this in my head and make changes here and there.

I'm making it this Saturday, so we'll both know at the same time! I bought the beans and pineapple today. Making 1-1/2 recipes so that I'll have enough, hopefully!

A slight variation on this is to add a handfull of fairly finely chopped barbeque pork shoulder to the pot. Makes the beans stand up a little bit.

I'm second-guessing my choice of the beans to begin this recipe. I purchased the plainest "pork and beans" I could find, so that any added ingredients and flavors wouldn't interfere with the other recipe ingredients. Is that right, or should I take them back and get something a little more robust?

You could try to make a smaller version, like 1/4 batch or something first??

OK, I tested this with the plain pork and beans, and it came out pretty good. I didn't bother with the toppings for my test, and I'm sure they will make it even better. I was afraid that they would be soupy with all the liquid that was already in the beans, but they were not. You can definitely tell there's bourbon in them! I'll go ahead and make them for the cookout with the beans I purchased, and I'm sure everyone will enjoy them.

I need to follow up on these, so no one else makes the mistake I did! Do NOT use plain pork and beans in this recipe! When I made the complete recipe it came out much too soupy! I ended up having to dissemble this after I had baked it and boil the sauce down to get it thicker. Then I just served it in a bowl. I was disappointed in the end result, but I'm sure it's because I used the wrong beans. I think it you used a Boston-style baked bean it would be better.

Fortunately the cookout wasn't at my house, it was a bring-a-dish affair, so most people didn't know who brought the beans

We were at our place in the mountains, so running to the store to pick up something else to take wasn't an option.

We used Bush's Boston Beans, two large regular and two large with Maple. We used Buffalo Trace Bourbon, probably more expensive than needed for this but Buffalo Trace is very flavorful and it is what we like to use when cooking. Buffalo Trace also makes a great Whiskey and Coke.
