It's a rainy day here, so I decided to experiment with pizza, and came up with this. I think it's delicious! The crust is not my recipe, it's from Eating Well Magazine; but the sauce and toppings are mine. Enjoy!

White Pizza

Amount Measure Ingredient -- Preparation Method

Whole Wheat Pizza Crust
2 Tablespoons Olive Oil
1 clove garlic -- minced
1 teaspoon dried oregano
1/4 teaspoon red pepper flakes -- or to taste
2 tablespoons flour
1/4 cup feta cheese -- crumbled
frozen chopped spinach -- thawed, drained, and squeezed very dry
marinated artichoke hearts -- cut into bite-sized pieces
red onion -- thinly sliced
mozzarella cheese -- shredded

Prepare pizza crust and pat out onto pizza peel which is dusted with cornmeal.

Place pizza stone on bottom rack of oven and preheat to 500.

To a small saucepan add olive oil, garlic, oregano and red pepper flakes. Simmer slowly until garlic is cooked but not browned.

Add flour and whisk for a few minutes. Add milk, and simmer until sauce thickens.

Add feta cheese, and stir until cheese melts into sauce. Remove from heat.

Spread sauce on pizza dough.

Top with spinach, artichoke hearts, and red onion.

Add mozzarella cheese to top.

Transfer pizza from peel to heated stone. Reduce oven temperature to 450 and turn on convection fan. Bake for 8-10 minutes.

NOTES : This is fairly spicy, so if you don't like heat, reduce the amount of red pepper.

Whole Wheat Pizza Crust

Amount Measure Ingredient -- Preparation Method

3/4 cup whole wheat flour
3/4 cup all-purpose flour
2 1/4 teaspoons fast rising yeast -- such as
Fleischmann's Rapid Rise (1 packet)
3/4 teaspoon salt
1/4 teaspoon sugar
1/2 cup hot water (120-130 degrees) -- (1/2 to 2/3)
2 teaspoons olive oil

Combine flours, yeast, salt, and sugar in a food processor; pulse to mix.
Combine hot water and oil in a measuring cup.
With the motor running, gradually pour in enough of the hot liquid until the mixture forms a sticky ball. the dough should be quite soft. If it seems dry, add 1 to 2 tbsp warm water; if too sticky, add 1 to 2 tbsp flour.
Process until the dough forms a ball, then process for 1 minute to knead.
Transfer the dough to a lightly floured surface.
Spray a sheet of plastic wrap with cooking spray and place it, sprayed side down, over the dough.
Let the dough rest for 10 to 20 minutes before rolling.

As far as easy pizza crust, if you have Trader Joe's in your area they sell it already made for about $1 a package and you can freeze it too. Works great, they have plain, whole wheat and an herb dough. I like to use it for pizza on the grill.
