Repost: Bully Boy Dressing, for spinach salad

Posted this a while ago on PeopleTalk...
This is a really old recipe...
but EXCELLENT on baby spinach greens with chopped hard boiled eggs and a little crumbled bacon...

Bully Boy Dressing
(MAKES ONE QUART)

1/2 small onion (minced)
1 1/2 cloves garlic (minced)
1/2 tsp. fresh ground pepper
1/2 tsp. paprika
1/2 tsp. salt
1/2 cup mayonnaise
1/8 cup spicy brown mustard
1 small egg

Place all in blender and blend at LOW speed until smooth.

Add 3 cups of salad oil (or olive oil, not Ex. Virgin) and blend SLOWLY until just mixed.
DO NOT OVER BLEND OR THE DRESSING WILL BREAK!

This dressing will break if over blended, but keeps well in the fridge for two months or so in a tightly sealed Ball Jar. (Or Lock n' Lock container)
It can be re-blended easily by a gentle shaking of the jar.

Serve over baby spinach leaves, topped with chopped hard boiled eggs and crumbled crispy bacon.
