For dinner Thursday evening we went to a new place, Roma at Oasis. For those of you who remember Marco from Isola Italian Restaurant at Simpson Bay Resort, this is his new place in Maho. Th place itself is all open air. The décor is Modern tropical Italian if that makes any sense. Really nice. We had a tael on the terrace under a huge umbrella. On to the food.

We began with their Calamari, of course. There was plenty for the three of us. The rings were meaty, tender, and cooked to perfection with a very light batter, almost like a tempura. There were served with marinara sauce. The perfect Starter. There were also rolls and breadsticks made in house and served with olive oil.

For our entrees, Valinda chose Risotto, with lees and scallops. Not only were there big, seared scallops on top but there were small scallops throughout. John had the Swordfish steak with mashed potatoes. The steak was huge and perfectly cooked. He Loved the mashed potatoes with were covered in small vegetables. I had Spaghetti al Mare. They make their pasta in-house and you can tell. The pasta was enrobed in wonderful marinara sauce and full of Mussels, Clams, Shrimp, Calamari, and Scallops. So, so wonderful. We all agreed that this was one of the best meals we’ve had on the island.

We were not going to have dessert, but Marco insisted and brought us the Tiramisu with three spoons. We all have had Tiramisu many, many times in many, many places. This far and away the best any of us has ever had. The custard was so rich and creamy and yet so light at the same time. The various components were perfectly balanced. We were absolutely blown away.

We finished with shots on Limoncello.

We can’t praise Marco and his staff enough. Many of them have been with him for years and it shows. Everyone is so welcoming and professional. And the Food!! We will definitely be going back because there are so many things on the menu we want to try.
