I find that most frozen veggies, when thawed, are about the same consistency as ones that were blanched. (except broccoli- defrosted frozen broccoli is pretty squishy!)

I use defrosted frozen Brussels sprouts for roasting with good results...actually you don't even have to defrost them- right in the oven frozen seems to work just fine! I used to spread them on the pan around the edges of frozen pizza so I could get my veggies even when I was eating prepackaged junk food! <img src="http://www.traveltalkonline.com/forums/images/graemlins/Tonguea.gif" alt="" />

Dharma, I agree with you that most frozen veggies, including brussels sprouts, come out fine if not overcooked. I generally cook them less than the package instructs.

I steamed some fresh brussels sprouts the other night, over top of the pasta I was cooking. Tonight I'm grilling tuna steaks, so I think I'll toss the leftover sprouts (which were somewhat undercooked the other night) in some olive oil, balsamic, and fresh thyme, and throw them on next to the tuna. I'm thinking they'll get hot and a little caramelized but not overdone.

Georgia... I like all my veggies crispy!
Once frozen, the ice crystals that form from the freezing breaks down the cell walls, they all turn to mush, for me anyway...
The only frozen veggies I like are peas, corn, ocra and french cut string beans...
Otherwise I buy fresh...
Esp. with a leafy veggie like sprouts...
I wouldn't freeze lettuce or cabbage... sprouts are basically little cabbages...
and frozen certainly would not work with my original post... Grilled Sprouts...
and fresh sprouts are available all year round now... at least in the NY/NJ area...
Just My opinion...

Frozen spinach is pretty gross too, but all other veggies I like any way they're made! Crunchy or mushy, raw or burnt, I rarely meet a veggie I don't love!

We do stop at the stands, and also hit up the Rasta Farm every couple of weeks. But we're not going to find brussels sprouts there!

Actually, we can occasionally get semi fresh sprouts at the groceries. Have to cook them really quick though!
