Why is there not any information on Patricia's in Smuggler's Cove on the internet like TripAdvisor?? Isn't it a beach bar right next to Nigel's Beach Bar on Smuggler's? We are staying in a villa about two blocks from there and I would love to get some more information about this place before we go next fall. Thanks for all the help!

You are correct. Nigel is on one side of the parking area and Patricia is on the other. Neither are currently out there. She typically has beer and a smallish bar setup under her tent. When it's busy she does make food as well and it's excellent! Usually she has at least cheeseburgers, ribs, chicken with sides. What else would you like to know? I'm certain I'll run into her today...

Thanks, that's kind of what I needed to know. We're not going until October, I had seen some obscure reviews mention Patricia's but not nearly to the extent of Nigel's. I'm sure we will visit both a couple of times during our visit. I would like to have a fresh fish/BBQ dinner for 6 adults the Saturday night we get there 10/23/21, I wonder if I gave her or Nigel several weeks notice, they could throw a nice fresh fish and BBQ dinner for 6 people. Nothing fancy, just something fresh on the beach that we can walk to from villa Ariana because it will be a huge day of travel all the way from Omaha. Thanks again for the reply!

I think you are imagining Nigel's and Patricia's "beach bars" as a little more than they are. Smugglers is very off the beaten path and is known (or luckily unknown) for its seclusion and emptiness of anything "touristy." Think deserted island beach. Patricia and Nigel were running under the radar, impromptu, put up-take down daily bars for years until the govt decided to assert their authority. They ran them off Smugglers for running illegal "bars" there. Later, the govt relented and Nigel and Patricia came back. Patricia, as far as I know post Irma, is still running her family operation off her folding tables, blender hooked up to a car battery, propane tanks to cook, and portable coolers for beer.(I'm not saying this to be condescending to her business. I'm just telling you what to expect. I have loved Miss Patricia since 2005 and only patronize her while at Smug). Nigel, on the other hand, was more of an entrepreneur and set up a more permanent structure. However, that is also very small time and simply serves its purpose -- to sell drinks and bar food.

These aren't beach bars in the sense of those at Cane Garden Bay which are more restaurants on the beach. Patricia and Nigel basically pack up at the end of the day and go home (usually around 5pm) when the tourists leave and the sand fleas come out in force. I think expecting a beach BBQ for 6 might be expecting a little too much. But, see Jason's post above for Patricia's in-villa services.

That's the Patricia I've known for years! Her "beach bar" defines the word rustic! smile Some of the best BBQ chicken and her made on the spot potato salad. We would use one of her broken plastic chairs to "dine" off of and sat in two more gazing at the water. I look forward to seeing her and her food sometime next years.

Normally I would say run like heck when it comes to beach potato salad made on the spot with warm mayonnaise BUT you are sooooo right. It is absolutely the best!

Most Mayonnaise today doesn’t spoil because there are no eggs but flavored emulsified oil.

But both Hellman's and Kraft list eggs as the first ingredient. I figured the lack of quick spoilage was the addition of preservatives as opposed to homemade mayo (or in today's parlance "house made")

To keep mayonnaise safe for consumption if it is not refrigerated it has to be kept from being contaminated. A perfectly clean utensil, (so you don't introduce bacteria), must always be used in the mayonnaise jar.to keep it from getting contaminated. When mayonnaise becomes contaminated or mixed with other foods that is when it needs to be refrigerated .I do refrigerate it on our boat because if multiple people are using it there might not be a guarantee that it has not been contaminated.

Fast foods like McDonalds, BK etc use Mayo on most of their products and they can sit out in the sun for hours and not spoil
Hellman’s and Kraft list eggs as an ingredient but I’m wondering whether the eggs were processed in a way to prevent spoiling.

Could be they use pastuerized eggs, a simple process of low heat for a period of time. Btw you can find them already pastuerized in some stores, the eggs have a P on them, can be eaten raw, Rocky-style!

Last summer I carefully kept the mayo uncontaminated and unrefrigerated while sailing around the Caribbean - after 6 weeks (when the jar ran out) it was still fine. Similarly for mustard, salad dressing, pickle relish. Most things available before about 100 years ago had to survive without refrigeration.

Wow, I did not see this thread headed it that direction, haha. If someone has an email or something for Patricia or Nigel that would be greatly appreciated. I do like the idea of Patricia making something to bring by the house. I completely understand the realm of what Nigel's and Patricia's is without being there. We just had a beautiful and amazingly tasty meal at Dany's on St Marteen a couple of months ago for 4 people. I dropped off the freshly caught fish the day before and he put together a simple but amazing lunch for my family. Thanks for the replies.

We are thrilled to read Miss Patricia is back at SC! She and Nigel were “removed” years back and I read Nigel had returned. But Patricia’s Cheeseburger in Paradise is just that, and her sides are amazing!
