I know not a very good subject description but....
I took a meal size dish out of the freezer for my dinner the other night. The label I put on it said "Curry Chicken and Plantains". It was delicious and I want to make it again and of course I can't find the recipe nor remember where I got it from. In addition to the chicken, plantains, curry there was also lentil beans and rice. Now I think the rice was cooked separately and the chicken mixture was poured over for serving. Any help will be appreciated!

Annie, I tried to find it in Recipe Zaar, using their recipe filter, but had no luck. It really does sound delicious, though! If you figure out how to re-create it, I hope you'll post the recipe here!

Plantain and Chicken Curry


1 very ripe plantain (yellow skin with black spots) -- cubed
1 chicken breast -- cubed
1 sliced onion
1/2 stick butter
1 medium apple -- peeled and cut into cubes
2 teaspoons flaked coconut
3 teaspoons curry powder
1/4 pint heavy cream
3 tablespoons flour

Boil chicken pieces until tender in about 2 cups of water. Remove from heat, strain chicken and save broth. Cut chicken into bite size cubes. In a sauce pan, sauté onions and apples in butter. Add bay leaf, coconut flakes, and curry powder. Sprinkle with flour and sauté for 3 minutes. While stirring, add reserved broth (should be about 1 1/2 cups). When sauce is smooth, add salt and pepper to taste. Add Cream, plantain and chicken. Simmer for 10 minutes. Serve over a bed of rice and garnish with coconut flakes.

Georgia, thanks for doing that! I get so angry with myself...I will make a dish that comes out so great that I want to make it again and then I either misplace the recipe of I can't remember where I got it from! I have about 300 cook books, a drawer full of recipes, a slew of cooking magazine and I always know that I will remember where I got the recipe that I just made from. Ha! Never happens. I made this particular dish last May and really wanted to make it again. Anon...thanks for posting that recipe but it is not what I was looking forward. The recipe I made did not have apples or cream in it. But thanks anyway!

i also have an extensive cookbook collection, although not quite as many as u do, and cooking magazines and loose recipes. a tip i recently read about was keeping a rolodex and listing an index of favorite recipes (not the actual recipes but where to find them)... not a bad idea. today i finally went out to buy a binder and dividers to organize my loose recipes. goodluck with your search.

Annie, I do that all the time, but mostly with recipes that I create on the fly. Recipes that I clip from a magazine, I immediately put into Master Cook on my computer if we like it. I also have e-cookbooks on several websites, so while it might take a while, I can usually find a recipe that I have enjoyed in the past.

I have a 1 TerraByte USB hard drive (mine is a Western Digital)...
that is always attached to my desktop, and I have a backup scheduled for "My Documents" and other folders on a weekly basis...
(scheduled backup software was included with the ext. HD, and you can customize the folders you want to backup)...
and I have also picked the option to keep 20 weeks of backups...
It cost less than $100 for the ext.rive and I have all my stuff backed up, every week, all the time...
well worth the price... I know, as I have lost Hard Drives more than any other hardware problem...
I also have the drive networked at home, so it backs up My Desktop, My laptop, Deb's laptop, the Desktop in our Guest Bedroom, My Netbook, and the laptop in our family room...
also Mine & Deb's old laptops whenever they come online...
with all those PC's I have only used about 1/3 of the external drive's 1 TB capacity...
that includes the 40,000 plus pictures we have... (OK, theres a LOT of duplicates in the picture category and most are high definition!)
I also replicate/merge all of our "My Documents" folders between all our online PC's weekly...
The replications/backups take place at 3AM every Wedneday...
replications first, then when finished, the backups...

what I'm doing is way overkill... but I don't ever lose anything... and it's done automatically... so I never have to worry about it...

I also have another 750Gig external HD that I store all my original application disks on...
Restore disks that come from the manufacturer...
XP/Pro, XP Home, Vista 32, Vista 64, Vista 128 (Ultimate), Office 2000, Office 2003, Office 2007, and a whole slew of other apps that I have...
along with all the install keys...
in case I lose a HD and have to restore...
This one has saved me a lot of times!

Brian, I don't have the faintest idea how to do a backup. I am a real computer nerd. Paul did all that. Right now I need a new computer and I have no idea what to buy. And when/if I get a new one I would not know how to get stuff from this one to that one. I have so many hard drives hanging around this house and I have no idea what, if anything, is on them.
