Grilled Basil Shrimp

Grilled Basil Shrimp - 01/01/2010 06:14 PM

Found this recipe in a church cookbook that my Mom gave me and we made it last night. It was very good!

Large Shrimp (as much as wanted)
large bunch of fresh basil
1/2 lb prosciutto ham, sliced thin
8 fresh cloves garlic
2 lemons
1-2 Cup Olive oil

Peel large shrimp. Wrap each shrimp in a piece of prosciutto ham, then wrap whole basil leaves around shrimp and ham. Put shrimp on skewers. Continue until all shrimp are wrapped on skewers.

Marinade: Mix olive oil with remaining basil leaves (chopped) and garlic (minced). Add juice of 2 lemons. Pour marinade over skewers and refridgerate for at least 1 hour. Grill.

This was tasty!

Yummm... some of my favorite food groups (sans a good bagguette! for sopping!)... shrimp, basil, proscuttio, garlic, olive oil!
I've found some of my favorite recipes in those local old Cookbooks... be it from a Church, a Red Hat's group, locaal Firehouses, or just local groups of whatever!
Usually can always pick one up at a garage sale somewhere for about $0.10-$0.25 or so...

My Mom just picked up a very old CrockPot Cookbook... right from the Crockpot box... It's, I think, a 1969 version...
at least that's what someone wrote on the cover...
Good recipes! I asked for it for Christmas, and she wouldn't give it to me!

Hey, I have my original 1979 version of the recipe book from my crock pot. I actually haven't even looked at it in a long time. It's kinda cool and windy here this afternoon. Think I will take a look at it!

I also have a 1970 version I received with my original crockpot (bridal shower gift!). One of our favorite recipes from that book was "old world saurekraut casserole" made with Polish sausage. <img src="http://www.traveltalkonline.com/forums/images/graemlins/Thumbsup.gif" alt="" />

I have a humburger casserole from the 79 book in my (old) crockpot right now. Will let everyone know how it comes out! Thought about putting it in the much bigger new crockpot, but I wonder about that thing that people talk about not putting too little food in a crockpot??? So I used the old one..

Yepr... the hamburger (humberger? lol, or is that's what it's called?) casserole was also in the '69 book too!
A lot of tried and true recipes there!
Let us know how it turns out!

Most times, with any crockpot recipe, we add a bunch of ground flax seeds (2-3 tbsp.)...
they are tasteless (so doesn't alter the flavor of the original recipe), add some thickening, and are good for you! they add a LOT of fiber!

Brian, never thought of adding flaxseed to the crock pot. Thanks for that tip.

I add ground flaxseed to lots of stuff... like my homemade tomato sauce...
or as a thickener for gravy...
mix it into the ricotta for lasagne or eggplant rollatini or manacotti...
it is tasteless, is a thickener, and has soooo much fiber...
we have one of those small coffee grinders (spice grinders?), and grinding flaxseed is most of what we use it for...
or grinding whole allspice!
