I just read that the CDC issued travel warning level 3 to Dutch St Maarten.
How many cases are there?

As of yesterday's update, as per the Government of Sint Maarten Facebook page, there are 66 active cases, 914 cumulative cases, 825 recovered, and 23 deceased. Yesterday there were 4 new cases reported, but 8 cases were listed as recovered.

I thought SXM was always (recently) a level 3.....USVI (all Islands) over the w/e had 13 cases and they have always been level 3

We first noticed the warning before booking several weeks ago, and I considered not going for that reason. Then I realized almost everywhere is level 3, and the situation is actually worse in the U.S. in terms of cases per 100,000.

Canada is also level 3. As was mentioned above just about everywhere is level 3

Exactly, It is like it was in the US this summer; outdoor dining, all servers wearing masks, socially distant tables, windy atmosphere, The hardest part about going there is timing your test to ensure your results come back in time for your travel. IMHO it is safer going there than the US if you compare screening going to Miami versus SXM (basically none).
Full plane going there, half full coming home, so worth it.
