This is why April Fools Day on Mondays is a bad...everyone is hyper vigilant and I didn't have the brain power for an elaborate ruse. But hey, I was in tropical mood yesterday and the ribs were great.

Hey Dan, you should live in Florida, and then you wouldn't have to do any elaborate ruses! We did lamb chops on the grill here yesterday, and had the a/c on, when it got to be late afternoon! The ribs do look good though!

I will slow cook them in the oven for 3 hours and then finish on the grill - or depending on my laziness just eat from oven. Some of our best meals were in the condo with the ocean view!!!

Last time we were in SXM webrought down all the "dry" ingredients for Jerk marinade. SO made able a couple applications Grilled fish and slow roasted pork roast....

I think the name is now just "Captain's" or "Captain's Rib Shack" and the "D" has been eliminated. It is a large red structure and the one closest to the road. Didn't try them this trip but others that did said they were good.
