Baguette in room. Relaxed in room. Stayed at RP beach. Nice quiet day. Have dinner reservation at Bamboo House. Took shuttle from Cole Bay Carrefour. Nice driver and new shuttle van. Nice place, owner nice wait staff nice. A couple of downers- it became vey cloudy in south west at sunset. Missed the great view of sunset over the lagoon. A bit windy but be calmed by the time food arrived. The next problem was the food. The presentation was beautiful! The salmon my wife got was over cooked. Asked for medium got well done -medium for salmon has some red in middle like steak. I had the red snapper nothing to write home about. The wife much better with meds.

OMG - that didn't last long. The new chef was getting rave reviews. Wonder what the problem is in retaining chefs.

Chef Jack is at Bamboo House. He was cooking this evening for his family. Please do not start rumors. Jack is actually about to aunch a brunch menu.

Sorry that your salmon was overcooked. We serve Salmon Medium rare unless requested otherwise. We are certainly happy to invite you back as our guest and we will exceed your expectations. Please ask for Gerald or Sophie.

Gerald, you and your staff run a first class operation! We had a great time! We even drove up the afternoon before, the staff let us take pictures. Made reservations for the following night. Shuttle was right there!!! We were seated with a great view inside the restaurant! ( weather was iffy that night) Waiter he was fantastic and the FOOD! AMAZING!!! Suprizing, for what we ordered (Wife-Fabila) the bill was very reasonable!!!

Thank you for your comments! my wife ordered medium! The wait staff should have said medium rare is the chef’s preference. We been coming to island for 16 years. We are going home very soon. Will be back in September. If you are open then I will contact you . If not we come again in mid March. I appreciate your response. Very professional!

I would say a medium cooked salmon would to me be overcooked and dry. Medium rare would be less cooked than medium and more moist. I don't get the complaint as it sounds like it came as ordered.

Medium still has an area which is pink and moist in my experience. Not like shoe leather.

There is a fine line between having salmon or any fish moist and just right to dry. Best to let the cook prepare it the way they know how is best. Then if not to your liking send it back.
