i LOVE spicy food. just finished having mushroom hot sauce made by yours truly and thought why not post my first recipe on ttol along with some pics (now that i figured out how to attach pics on this site). this recipe is tried and true. have made it a zillion times and love it every time.

mushroom hot sauce:

20oz mushrooms
1 head garlic
1 med onion, sliced
1/2tsp salt
2 tbsp fish sauce
1 scallion, chopped
1/2 cup cilantro, chopped
hot peppers, as desired *i used 15 thai chili peppers- HOT

place mushroom, garlic, onion on a baking pan and broil 10min. turn the vegs and add hot peppers, then broil 10min more. turn off oven and let it sit for 10min in oven. chop peppers, garlic (peeled), and onion in food processor for approx 10sec. add mushrooms, salt, and fish sauce and chop for another 10secs or until mushrooms are chopped to desired size. add scallion and cilantro and mix with spoon.

i always make extra to freeze. it freezes nicely. bon appetit! and other spicy food lovers, please do share any hot sauce recipes u love.

after i posted i thought about editing the name, since some may not consider this "sauce", but i grew up eating this and always called it hot sauce. it's laotian. it goes well with roasted meats and steamed vegs served along w/ rice, as an example, but i'll eat it on anything that i want to add a kick to.

lol, never crossed my mind to use this as a dip and not sure how it'd taste, but if u try it let me know! imo scoops r too salty, so i suggest a diff chip. i can vouch that a cold beer washes this sauce down nicely though. cheers. <img src="http://www.traveltalkonline.com/forums/images/graemlins/drinking.gif" alt="" />

i think u mentioned that u have an inventory of ground chicken recipes? this sauce compliments mild foods well, so i bet there's a few of your recipes that would go hand in hand with this. i hope u try this one out. if so, i'd love to hear your feedback!

I am going to try on fish. I have a hot salsa that I use on fish, but this sounds much better. Thank you.
