[color:"blue"]Raspberry Lemon Tart[/color]

This dessert is so easy and so good!

1 tube of sugar cookie dough
1 jar of lemon curd
2-3 ½ pints of fresh raspberries

Press the sugar cookie dough into the bottom and up the sides of a 10” tart pan. Bake according to package directions till golden. Cool. Spread the lemon curd onto the baked shell. Place the raspberries on the lemon curd, one by one, pointed side up, until completely covered.

Optional
I, sometimes, make a clear glaze to pour over the raspberries. I use a packet of Oetker Glaze, but I don’t know how widely available it is.

I'd bet this would be good with 1/2 raspberries & 1/2 blueberries too... and would look great!
and maybe insted of the glaze, a dusting of powdered sugar...

anyway you do it, it sounds good!

For a nice raspberry glaze...
press a 1/2 pint of raspberries thru a fine strainer to remove the seeds... (I press it thru with the back of a soup spoon to get all the juice)...
add 2 tbsp. confectioners sugar, and about 1 tbsp. Chambourd, and bring to a boil for about 2 minutes...
let cool to thicken and then brush over top of tart...
use just enough to to cover thinly, not enough to make it soupy or pool! then refrigerate...
leftover glaze is really good over vanilla and/or chocolate icecream...

every Thanksgiving we get a "blueberry cream pie", which is basically a tart, with really thick Boston Cream Filling, covered with fresh blueberries, and dusted with powdered sugar...
$19-$28 each, but soooooo good!
we get it them at Briermere Farm in Riverhead on L.I...

Even all blueberries will work. Ive always added lemon zest to my blueberry pies. The two flavors work very well together.

I also make a version of a raspberry sauce... typically in the winter when raspberries are out of season and REALLY expensive. Take a bag/container of frozen berries in syrup, defrost, dump in a blender and blend till smooth. Pour thru a fine strainer to remove seeds and drizzle over cantaloupe or a tasty pound cake. Makes a quick, easy dessert.
