Pumpkin Tiramisu - 10/24/2009 12:02 PM

This will be my new 'pumpkin pie' on Thanksgiving. From www.bhg.com
Pumpkin Tiramiu

Ingredients:
3 oz. package ladyfingers, split
1/3 cup maple syrup
2 Tbsp. orange juice
3/4 cup pumpkin puree (not pumpkin pie mix)
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. ground cloves
1/4 tsp. kosher salt
2 cups frozen whipped topping (such as Cool Whip), thawed
4 oz. mascarpone cheese
additional cinnamon for garnish (optional)

Preparation:
Line a loaf pan with plastic wrap, making sure the plastic extends at least one inch over the sides. You will use this later to lift the tiramisu out of the pan.

Arrange half the ladyfingers in a single layer in the bottom of the prepared pan.

Whisk maple syrup and orange juice together in a small bowl. Pour over the ladyfingers.

In a medium bowl, stir pumpkin, cinnamon, nutmeg, cloves and salt together. Fold in 1 cup of the whipped topping, stirring until well-combined. Spread half of this mixture over the ladyfingers.

Arrange remaining ladyfingers in a single layer over the pumpkin filling. Spread remaining pumpkin filling over this layer of ladyfingers.

For tiramisu topping: Beat remaining cup of whipped topping and mascarpone cheese together until smooth. Spread evenly over pumpkin filling layer.

Cover and refrigerate at least 4 hours or as long as overnight.

To serve, lift the tiramisu out of the pan using the plastic wrap. Carefully slide the tiramisu off the plastic wrap onto a serving plate. Sprinkle cinnamon on top for garnish.

When you serve it, do you scoop it? or slice it?
Is it mushy or firm?

Either way. You could also serve it as a Parfait w/whipped cream!! Top it with a little freshly ground nutmeg. Yummma!!

This sounds great. How exactly do you "slide" it off the plastic wrap onto a serving plate. Individual pieces, or the whole thing? That part sounds very tricky.

Delicately!! It could be made in a pretty cassarole pan or you could make in a pretty trifle bowl and scoop out. Either way it's delicioso!! <img src="http://www.traveltalkonline.com/forums/images/graemlins/Clapping.gif" alt="" />
