There was a program on the Foodnetwork channel the other night on comfort food. The restaurants featured their specialties.....and one was hotdogs cooked in beer. They cook them in beer then quickly grill them to make them browned. I don't eat hotdogs but they sure looked great!!

I cook bratwurst in beer and then saute them in a frying pan to get the skin crispy as I don't have a grill. I serve them with peppers and onions in a long soft roll. For someone who likes sausage, peppers and onions on Italian bread this is pretty darn good. Beer gives it a nice unique flavor and the Bratwurst are quite different from Italian sausage.

Slow-Cooker Veggie Chili from: www.southerncooking.com


Nothing like something from the slow-cooker for game watching! I'd serve with some 'poppin' fresh bread sticks'. Yumma!! Add a dash of hot sauce to your bowl for extra heat. Use a variety of your favorite beans if you wish.

Prep Time: 25 minutes
Cook Time: 8 hour(s) 18 minutes
Yield: Makes 15 servings (serving size: 1 1/2 cups)

Ingredients:

* 2 large carrots, diced (1 cup)
* 2 celery ribs, diced (1/2 cup)
* 1 medium-size sweet onion, diced
* Vegetable cooking spray
* 2 (8-oz.) packages sliced fresh mushrooms
* 1 large zucchini, chopped (1 1/2 cups)
* 1 yellow squash, chopped (1 cup)
* 1 tablespoon chili powder
* 1 teaspoon dried basil
* 1 teaspoon seasoned pepper
* 1 (8-oz.) can tomato sauce
* 3 cups tomato juice
* 2 (14 1/2-oz.) cans diced tomatoes, undrained
* 4 (15-oz.) cans pinto, black, great Northern, or kidney beans, rinsed and drained
* 1 cup frozen whole kernel corn

Preparation:

1. Sauté first 3 ingredients in a large nonstick skillet coated with cooking spray over medium-high heat 10 minutes or until onions are translucent. Add mushrooms, zucchini, and squash; sauté 3 more minutes. Add chili powder and next 2 ingredients, and sauté 5 more minutes.

2. Stir together tomato sauce and tomato juice in a 6-qt. slow cooker until smooth. Stir in diced tomatoes, next 2 ingredients, and carrot mixture. Cover and cook on LOW 8 hours.

Creamy Buffalo Chicken Dip



Creamy Buffalo Chicken Dip is a super easy and delicious appetizer recipe. Serve it with potato chips, bread sticks, and even Buffalo Chicken Wings for extra fun.

Prep Time: 0 hour, 15 minutes
Cook Time: 0 hour, 25 minutes
Ingredients:

* 2 tablespoons butter
* 1 onion, chopped
* 3 cloves garlic, minced
* 1 (8-ounce) package cream cheese, softened
* 1/2 cup creamy blue cheese salad dressing
* 1/3 cup buffalo wing sauce
* 1-1/2 cups chopped cooked chicken breast
* 1 cup crumbled blue cheese, divided
* 2 tablespoons grated Parmesan cheese

Preparation:
Preheat oven to 375 degrees F. Spray a 9" glass pie plate or a 1-1/2 quart casserole dish with nonstick cooking spray and set aside.

In medium saucepan, melt butter over medium heat. Add onion and garlic; cook and stir until tender, about 5-6 minutes. Add cream cheese; cook and stir until melted. Remove from heat and stir in salad dressing, buffalo wing sauce, chicken, and all but 2 tablespoons of the blue cheese; mix well.

Spoon and spread into prepared plate or dish. Top with Parmesan cheese and remaining blue cheese. Bake for 20-25 minutes until bubbly and hot. Serve warm with dippers like celery sticks, baby carrots, and tortilla chips.

That sounds yummy.


If you're busy and need a dip,

1 pkg softened cream cheese
1 can chicken breast, put in food processor
1 pkg ranch dressing mix

Mix all together.
