thai chicken fried rice, serves 2

4 tbsp oil
1 head garlic, chopped
1/2 lb boneless chicken, sliced in bite size pcs
1 tsp salt
3 tbsp low sodium soy sauce
1/2 tsp ground black pepper
1 medium white onion, chopped
2 large eggs, lightly beaten
3 cups cooked rice
2 stalks scallions, chopped
1/2 cup cilantro, chopped

heat wok with oil on high heat. add garlic and stir constantly until light brown, about 2mins. add chicken and stir constantly for 2mins. add salt, soy sauce, black pepper, onion (and chopped hot peppers if you want heat) and stir well for another 2mins.

turn heat to medium. add eggs and wait 30secs before stirring lightly. add rice and stir constantly for 4mins. add scallions, stir well, and turn off heat. add cilantro, stir lightly, and serve.

Sounds good! Wish I could have rice at the moment, but on South Beach and will wait a little longer before eating some brown rice.

Since you're doing the picture thing, for presentation sake, I would have either put some paprika over the top or added some finely chopped red pepper! Just helping you out there! <img src="http://www.traveltalkonline.com/forums/images/graemlins/Grin.gif" alt="" />

yes, a head of garlic. i love garlic, but even still it's surprisingly not as overpowering as it may seem.

carol- funny you should mention this because after the picture i did sprinkle with hot pepper flakes (i have thai chile peppers in the freezer but was too lazy to dig them out) and more cilantro. i'll keep presentation in mind for future postings. <img src="http://www.traveltalkonline.com/forums/images/graemlins/Wink.gif" alt="" />

I made a chicken in the crockpot this weekend...
Stuffed the cavity with a whole head of garlic (peeled and each clove cut in half) and a coarsley chopped onion, and S&P...
with a small can of chicken broth... That was it...
The garlic comes out sweet after cooking...

Just like in "Chicken with 40 Cloves of Garlic"... (that's about 3-4 large heads)...
I've made this version in the past... good recipe...
and no "garlic" breath after you eat it...

not sure if you knew when posting, but i am a numero uno fan of ina garten. i own all of her cookbooks and don't remember this recipe being in any of them. i am definitely making this one soon. thanks so much for posting the link!

CS...did you use the full quantity of soy sauce in that recipe? It looks so light to have that much soy in it. BTW, I think your photo is beautiful! I love the way the grains of rice are laying on the fork. I actually thought it looked like it was "styled" when I first saw it!

georgia, i followed the recipe as is. the fork is there because i was preparing to eat... then i figured i should post the recipe, so i had to put down the fork and grab my camera.
