Corn Pudding

From a friend at a club we belong to...
It is EXCELLENT!

ONLY 5 Ingredients!
1-15 ounce can cream style corn
1- 15 ounce can corn (drained)
8 oz. sour cream
1 stick of butter (cut up into pieces)
1- 8 1/2 0z. package of Jiffy corn muffin mix (dry)

Mix the first four ingredients in a 9 X 13 pan. Do not grease the pan, I found that glass dish works best.
When the wet ingredients have been mixed, add the dry Jiffy corn muffin mix and quickly blend together.
Place in 350 degree oven for 40 minutes.
Serve warm.

Louise posted this one before we even had a recipe forum. I have made it a couple of times, with the additions I noted, and it was very good. As noted, I added even more cheese. I love cheese, and think your recipe would be better with cheese also. I actually bought some Jiffy Mix the other day, with the intent of making it. Maybe will make it this weekend.

Fabila (Louise) and I have had this recipe for a long time. I usually put it in a deep souffle type glass/ceramic dish and bake it for about 50-65 minutes. This is always a hit for a potluck.
In fact, I made it for a St Maarten Day potluck BBQ we had one year at Beachside Villas. I think it is even better warmed up either in the oven or microwave. It is great to make ahead, cover with plastic wrap in refrig, and bake later.

i used that corn pudding recipe this past thanksgiving and it was a hit... probably because it's so bad for you.

Caribbeanscout - Exactly. We try to watch our intake of 'bad' calories. But, when I ask my husband what he would like for dinner, its usually the corn pudding.

yummmm Carol... that does sound good!
but that is more of a casserole, as opposed to a (slightly) lighter pudding...
I think adding fresh chopped jalapenos to either recipe would be good too!
I love cornbread with jalapenos...

I guess I don't know what the difference is between a casserole and a pudding, but I would rather have the cheese, onions, peppers, etc., in my dish..

The cheese is really what makes it a casserole... makes it MUCH heavier...
a pudding is... well, like pudding or custard...
the cheese takes away that custard texture...
