need easily transportable recipe - 10/07/2010 09:01 AM

We're heading to Georgia for a pig roast this weekend and I'm looking for something easy to transport. We won't have a kitchen at the hotel but can hook up a crock pot at the event. Any thoughts?

Mull apple cider in the crock pot and add some rum!
Nice to drink on chilly evenings!
Goes well with pork.

This recipe would go great at a pig roast... for dessert!
and it's easy to make and no heat at the event required!
Apple Cranberry Streusel Custard

or Corn Pudding...

From a friend at Sky Farm...
It is EXCELLENT!

ONLY 5 Ingredients!
1-15 ounce can cream style corn
1- 15 ounce can corn (drained)
8 oz. sour cream
1 stick of butter (cut up into pieces)
1- 8 1/2 0z. package of Jiffy corn muffin mix (dry)

Mix the first four ingredients in a 9 X 13 pan. Do not grease the pan, I found that glass dish works best.
When the wet ingredients have been mixed, add the dry Jiffy corn muffin mix and quickly blend together.
Place in 350 degree oven for 40 minutes.
Serve warm.

Brian's suggestion for Corn Pudding is great. That recipe is awesome, I make it all the time and people rave! Baked beans in the crock, too. Make some
'cheaters' w/canned beans....ketchup, brn.sugar, garlic & onion powder & perhaps some chunks of ham or bacon. This can be done in the Crock. You can bring everything (don't forget the can opener) with you and dump it in the pot.
I've done that and it works out great. I've also added some hotdogs to the mix.
Yumma!

**Oops almost forgot about this one for dessert, aptly named:
Crockpot Chocolate Mess

This fabulous, decadent chocolate pudding cake is made in your crockpot.
Prep Time: 20 minutes
Cook Time: 7 hours
Total Time: 7 hours, 20 minutes

Ingredients:
•1 pkg. two layer chocolate cake mix
•3 oz. pkg. instant chocolate pudding mix
•4 eggs
•1 cup water
•2 cups sour cream
•3/4 cup vegetable oil
•3/4 cup semisweet chocolate chips
•1/4 cup milk chocolate chips

Preparation:
Spray a 4 quart crockpot with non-stick cooking spray and set aside. In a large bowl, combine the cake mix and pudding mix. In a medium bowl, beat the eggs with the water, then add the sour cream and oil and beat until smooth. Add to the dry ingredients and beat well. Stir in the chocolate chips.
Pour into crockpot. Cover slow cooker and cook on low for 6-8 hours, until top springs back when touched very lightly with finger. 8-10 servings

** You could actually do this at home and transport all mixed in the Crock. Put it in the fridge at the hotel and take it out in the am. **

Have fun!! <img src="http://www.traveltalkonline.com/forums/images/graemlins/Cheers.gif" alt="" />

Annie, I know, but this is a 'cheater' version. Ketchup adds a nice flavor...just a squirt! Don't be mad at me.... <img src="http://www.traveltalkonline.com/forums/images/graemlins/jester.gif" alt="" />

I would never be mad at you! <img src="http://www.traveltalkonline.com/forums/images/graemlins/Grin.gif" alt="" /> I have a great recipe for doctoring up canned Baked Beans (and naturally using B & M Baked Beans!). I got this out of Woman's Day in July of 1970! I'll have to post it one of these days.

Re: need easily transportable recipe - 10/08/2010 08:41 PM

Good! That's basically what I do. I put in all sorts of stuff and taste along the way. Any good canned beans will do. Sometimes I put in a hit of cinnamon & nutmeg...a 'smidge' of ginger. (don't you love my measurements? but it's the way I cook. <img src="http://www.traveltalkonline.com/forums/images/graemlins/jester.gif" alt="" />) The tastebuds tell how much is needed.
Yah, Annie, if you find the recipe post it because we don't always have time to bake from scratch....although there's nothing like the REAL DEAL!! <img src="http://www.traveltalkonline.com/forums/images/graemlins/Clapping.gif" alt="" />

Brian, Never heard of Grandma Brown's Baked Beans. They are not even New England Beans...they are from N.Y. <img src="http://www.traveltalkonline.com/forums/images/graemlins/Grin.gif" alt="" /> I was born and raised in Woburn, MA. and grew up with B & M Baked Beans from Maine! <img src="http://www.traveltalkonline.com/forums/images/graemlins/Grin.gif" alt="" /> I put molasses, salt pork, chili powder, etc in them. Never heard of Upton!

Re: need easily transportable recipe - 10/08/2010 11:10 PM

Grandma Brown's are the best! and Upton is just SW (15 miles) from Framingham, Ma... right off 495...

Anyway Grandma Browns are just baked beans...
not much added... just ready for all your own personal additions...
B&M are from Maine... GB's from NY...
Neither are from Bean Town...
Geography has nothing to do with it... <img src="http://www.traveltalkonline.com/forums/images/graemlins/Grin.gif" alt="" />

BTW... the absolute best Blue Claw Crabs I have ever had were from Stonington, Ct...
NOT Maryland!

Brian...it's B & M...which is Boston and Maine! <img src="http://www.traveltalkonline.com/forums/images/graemlins/Laugh.gif" alt="" /> <img src="http://www.traveltalkonline.com/forums/images/graemlins/Laugh.gif" alt="" />
Where abouts in Stonington where the crabs from? I used to live in the Village. Loved it there.

What? I've been born and raised here and never heard of Grandma's....except for my grandma's! <img src="http://www.traveltalkonline.com/forums/images/graemlins/jester.gif" alt="" /> I like Bush's best. They're full-bodied beans!

annie, Skipper's Dock... they make an excellent Bloody Mary too!

Brian, I love Skipper's Dock and I had a great Bloody Mary there last July. Fantastic scallops, too. We all had some great food there.

I put allspice in my cheater's baked beans. And a little worcestershire and mustard, too. My Mom always put a little ketchup in hers!

Re: need easily transportable recipe - 10/15/2010 11:31 AM

I add some nutmeg which rounds out the flavors but allspice can do the same thing. I sometimes like 'cheater beans' better than the real deal....except my Grandmothers beans. For an Italian she made the BEST! <img src="http://www.traveltalkonline.com/forums/images/graemlins/Clapping.gif" alt="" />

Peconic's corn pudding - 11/22/2010 12:17 AM

Contessa or Peconic....Do the butter pieces get mixed in with all the ingredients or just laid on top?

Thanks to my "GOTTA BE GOOD" COOKS..... <img src="http://www.traveltalkonline.com/forums/images/graemlins/dine.gif" alt="" />
