We're heading to the beach in a few weeks. I know there are many grilled shrimp recipes out there- just wondering your favorites. I'm not a fan of kabobs-had rather cook on disposable grill pan. Thanks. Tucker

I found this recipe in a magazine Years ago. Food and Wine I think. Anyway, it's always a hit.

Grilled Shrimp with Orange Curry Peanut Sauce

1/3 C orange marmalade
¼ C orange juice
2 T creamy peanut buter
1 T Dijon mustard
1 T curry powder
1 tsp vegetable oil
½ tsp salt
½ tsp crushed red pepper flakes
¼ tsp chili garlic paste such as Sambal Oelek
Zest of one orange

Combine all ingredients. Taste and adjust seasonings to taste. Baste over shrimp and grill. Also works with chicken or pork. Serve more sauce on the side.

Sriracha made by Huy Fong, also known as "Rooster Sauce" is another popular chili garlic paste. You may have seen this as a condiment at some asian restaurants.[Linked Image]

Sriracha is great. Kind of a sweet heat.

I use the sauce with pork tenderloin and grilled chicken much more often than shrimp. You can adjust the amount of heat but for me the orange, curry peanut mix is awesome.

I can't do peanut butter but the rest of it sounds good. How do you think it would be without the PB or what could be substituted in its place?

Hummm. Never thought about a substitute for PB. Is it just peanuts you can't do or is it all nuts? Do they make a soy substitute?

It's the peanuts only that I have a problem with.

Then you might look for cashew butter. I think that would work nicely.
