we're going to the annual garlic festival in saugerties and plan to load up with garlic. any recipes to share?

[color:"blue"]Roasted Elephant Garlic[/color]

Ingredients
1 Elephant Garlic
1 t Olive Oil

Instructions
Preheat oven to 400 degrees.

Peel the outer layers of papery skin from a full fist (cluster) of elephant garlic, leaving a small amount of skin behind. Cut the very tops off the cloves with a sharp knife - only about 1/4 of an inch, just enough to expose the individual cloves inside the skin.

Wrap in aluminum foil, and drizzle some olive oil in with the garlic before closing the foil completely.

Bake for 30-45 minutes, or until garlic feels soft when pressed.

Allow to cool slightly, and carefully squeeze garlic out of the skins, or gently slice open the sides and remove with a fork.

Notes
Roasted Elephant Garlic is delicious eaten as is, or mashed into a paste and spread over warm french bread.
It is also delicious mixed with mashed or baked potatos, or on bagels with sour cream.

When I lived back in California I went to the Granddaddy of all garlic festivals a couple of times, The Gilroy Garlic Festival. They get over 100,000 people for the weekend. I remember an earlier post of yours and am kind of referencing it here. At the Gilroy festival, they make a garlic ice cream that is delicious.

Here is a recipe for garlic shrimp.

Ingredients:

1/3 cup butter
1 ˝ to 2 pounds large shrimp, peeled and deveined
4 to 6 medium cloves garlic, crushed and minced
1/3 cup chopped fresh parsley
2 ˝ tablespoons lemon juice
Salt, to taste

Instructions:

1. In a large skillet, heat butter over medium heat until butter stops foaming, about 30 to 45 seconds. Add the shrimp and garlic and sauté over medium heat, turning frequently until the shrimp just turn pink, about 4 to 5 minutes.

2. Add the parsley, lemon juice, and salt to taste; stir well. Remove the pan from the heat and serve.

Makes four to six servings.

I did not know that! I hate it when they retire a flavor....they used to make White Russian ice cream that was wonderful. Got too expensive to make, they said.

I'm not sure if the B&J's Garlic Ice Cream was a Limited Edition or a production item that was retired...
It was quite a number of years ago...

what a memory you have! i'd love to make it to gilroy one day, but for now the annual hudson valley garlic festival will do. speaking of garlic ice cream, i may just have to give that a try, now that we've broken in our ice cream maker. peconic- we do the roasted garlic on the grill vs oven and it's a nice spread on just about anything. and the other recipes are great as well. keep them coming. thanks!

impressive, annie. i guess you like garlic! what are some of your favorites? i'm not really looking for anything in particular, just recipes where garlic is the star of the show. so when i hopefully return to sxm in november it will be coming out my pores and keep the stupid mosquitoes away. i got eaten up alive last weekend.

L, I have a huge collection of cookbooks and I mostly just read them and then do a search on the web for a recipe. <img src="http://www.traveltalkonline.com/forums/images/graemlins/Laugh.gif" alt="" /> <img src="http://www.traveltalkonline.com/forums/images/graemlins/Laugh.gif" alt="" /> I am making this for dinner this evening:

I've made it a great many times before and it always has been good. I do use sea scallops though and I either saute the garlic up with the butter, instead of just putting it in the crumbs, or just melt the butter along with the garlic in the oven. I don't use the cheese.

garlic ice cream tastes better than it sounds.

bigjim- i've been to the stinking rose in san fran. thanks for the reminder. i checked out the link and there are some inspiring dishes. garlic meatloaf sounds great!

the festival was a good time. the most unusual item we bought would be the garlic chocolate chip cookies. haven't tried it yet; it's for dessert tonight. we also bought garlic, of course- pink music (hot as hell- can i say hell on here?), german red, and oregon blue (mildest of the three).

any more recipes out there?
