CS! YOU KNOW HOW TO SLICE A FLANK STEAK!
I can't believe so many people will just serve you a "chunk" of flank steak!!!
or not know enough to cut it thin or on the bias!
Flank Steaks and Skirt Steaks are my absolute fav's!
They are great on their own... and do extremely well with a good simple marinade...
Yours looks delicious! You have my mouth watering now!

I enjoy a marinated flank or skirt steak, but my new favorite is a Flat Iron Steak. When cooked right it is fork tender and flavorful!

Also, don't remember if I have shared this here before, but since winter is crockpot time in my house, this is one of my favorites:
Mexican Flank Steak

That happened to me at a restaurant once.
I asked the server if they were going to slice it for me,
at which point I was handed a steak knife and told to expletive slice it myself.

I did.
I also left a 3 cent tip on the credit card slip. <img src="http://www.traveltalkonline.com/forums/images/graemlins/Groovin.gif" alt="" />

I agree, a flat iron steak is more tender, and not quite as "stringy"...
But for the most flavor, and moistness, I like a skirt steak, as they are well marbled...
and if you slice it thin, across the grain, it is as tender as Filet Mignon... Fork tender... no need for a knife...

all three take marinades very well, just don't over marinade them...
Or they will take on the taste of the marinade, and you lose that great steak flavor...
I only marinade any of these for about an hour or two... with either Terriaki or Itallian Dressing...
Flat Iron steaks are definately a LOT cheaper ($ wise) than Flank or Skirt Steaks...
