i know, it's very adorable. i'm debating about the brownie shape, round or square. if it's supposed to be santa coming out of the chimney, then i'd think it should be square... if i make it round, then i have no problem eating all the scraps. it's a win-win situation. <img src="http://www.traveltalkonline.com/forums/images/graemlins/Grin.gif" alt="" />

Did you make the butter cream icing from the recipe or did you use a pre-made icing, if the later, which flavor did you use?

We used pre made butter cream icing. Thought I would get Eric to post the picture today, but apparently not. Will try to get it posted tomorrow.

Another idea besides icing...pipe some melted white chocolate around the base of the strawberry. Instead of topping with a smidgen of melted chocolate, top off the "hat" with a white chocolate chip!

just had the idea to use a small biscuit cutter versus cutting all of them - much faster. I too have a company Xmas party - thanks for the GREAT idea!

I haven't gotten round to posting my pictures yet. A few comments and suggestions--

I do want to say that you really need to have a smaller finished product overall than what I thought I would want. Otherwise, it is too difficult to eat. The final product needs to be the size of one really large bite, alltogether.

I started out to try to cut the brownies with a small glass. It ended up kind of crushing the brownies down. I wound up cutting them with a knife, in squares, which ended up working much better.

For the icing, to do them correctly you really need to use a really WIDE tip on the pastry bag. We used too thin a tip.

Also, they are difficult to store properly because the brownies get stale quickly unless they are in an airtight container. And it is difficult to have an airtight container, other than a cake plate or similar, as most containers are too short, by the time you have the strawberry on top of the brownie.

Everyone said that they were just TOO CUTE!! There are some storage, etc., issues, but in general, they are very easy to make and well worth it!!

Will try to get Eric to post the pic today. The other 'tip' is just that they obviously look better if most of the strawberries are about the same size. I wasted some of the brownie because I messed around with cutting them, and got around 20 finished 'hats'. The container had around 30 strawberries, so I was able to pick through and not use the largest and the smallest ones.

We actually ended up bringing some back home, as there were so MANY sweets at the party. A lot of people opted for the red velvet cake instead. <img src="http://www.traveltalkonline.com/forums/images/graemlins/Smile.gif" alt="" />

It's usually just a chocolate cake with TONS of red food coloring. Doesn't have to be if you make it properly, but 99 times out of 100 that's what people do.

Yes, that was tough luck!! <img src="http://www.traveltalkonline.com/forums/images/graemlins/Smile.gif" alt="" /> As I said though, they are somewhat difficult to store properly and not get stale, unless you have a tall airtight container, as the brownies go stale quickly.
