you might find a local hole in the wall restaurant that might serve it. but I doubt it. In general sxm people do not eat iguana. People from some of the other islands do..like Curacao for instance.
At carnival time some of the food booths in the carnival village serve iguana soup.
In Mexico, in March, it is eaten by the locals. I don't think it is served in any of their restaurants.

Actually, it is Andrew Zimmern, but it does sound like something he would partake of.
It's the other white meat! My dogs love to eat them all except the head and last part of the tail. Some times they eat the head too..

They eat them in Central America also.
When I was in Puerto Vallarta a few years ago, I was told that when I ordered El Pollo in many low cost places I was really getting Iguana.
Don't know. I was there to relive "The Night of the Iguana" in a manner of sorts anyway so all was good.
Two years ago I picked up a fresh road killed iguana in SXM and grilled it that night, and yes, it tasted like chicken.
