Our best meal this trip was at Sublime last night. Veal osso bucco was tender with two big pieces served with equally delicious risotto and roasted veggies with garlic. A divine meal that made me consider licking the plate but I did not.

David’s duck breast was huge and tasty served with the best scallop potatoes we’ve ever had. Nice orange sauce on duck.

Rib eye for our friend was 8 out of 10. Our meals were 11 out of 10. Just awesome and portions were huge. We had no room for dessert. Next trip warrants two visit to Sublime

We are finally getting there tonight!

I don't know why we were discouraged from going last November. We have only heard
GOOD things!
I'm trying to decide what I can have, so there is room
for dessert. 😅

Sublime is deffinatly on our list for May. I'll be getting the duck for sure.

Sublime has been one of our most favored restaurants for a while, but particularly so since it reopened at Maho. Glad you all enjoyed it and really proud of you, Louise. Licking the plate really wouldn’t have been cool…….😉😉

Wow!! Everything looks delicious but yeah, that duck breast is huge! And looks to be cooked just right.

It was a perfect medium. I know most like it medium rare which the waiter even recommended but we both don’t like anything less than medium doneness. They still have the scallop and risotto dish which was heavenly last year as was the beef short ribs. The beef short ribs are not on the menu. 15% service charge was added as in almost everyplace we ate on the Dutch side.

Waiter told us the staff gets 5% which they all split, wait staff, bartender and kitchen. Waitress at Courtside Carlfe & Lobster House told us the same. Tjeu only get 5% of 15 added to bill.

The red light over me killed
my pictures, but it is the Risotto with
Scallops and asparagus.
And the Chilean Sea Base.
Both excellent!

We've never eaten there, but someone else's pictures came out red like that. You don't notice it in the restaurant?

Reservations are a good idea, particularly if you want a certain spot at a given time. It’s not the old Paris Bistro. Third level in the Maho car park and walk through the alleyway - turn right to Jax or left to Sublime. We prefer dining outside and watching the activity on the street below. And don’t forget - they offer selected half price apps and drinks from five to seven if you’re early diners. Or they did in November and I’m guessing they still do.

While we pretty much enjoyed all the appetizers during happy hour, the entrees looks wonderful as well.
Restaurant is in the old bamboo bernie's .
nice modern decor and excellent service.
Happy hour is served through out the restaurant, not just the bar area.

Looks delicious. We have never eaten at Sublime. Funny though, last week, we walked to the restaurant, to try it, but found it closed for a private party! Was a bit disapointed, but ended up having a wonderful second meal at Moulen Fou. I wish i took pictures of our meal there, the veal chops were two of the best I have ever had. Next year, we will try sublime im sure.
