Bobby Flay's recipe

OK, this is totally based on Bobby Flay’s recipe above. We thought the original recipe was entirely too sweet, but may have been based on our BBQ sauce. So, regardless, we added the vinegar and hot sauce.

This would make a great pre-game football meal! <img src="http://www.traveltalkonline.com/forums/images/graemlins/Grin.gif" alt="" /> Especially combined with some really great mimosas or other cocktails of your choice! <img src="http://www.traveltalkonline.com/forums/images/graemlins/toast.gif" alt="" /> By the way, I have recently learned that prosecco is a really great, inexpensive substitute for champagne in mimosas at home, where you only want a couple of drinks, and don't want to waste a whole bottle of champagne! Those mini bottles of prosecco are really cheap! <img src="http://www.traveltalkonline.com/forums/images/graemlins/Grin.gif" alt="" />



BBQ Pulled Pork Leftover Fritos Pie

Serves 2
1 cup BBQ pulled pork leftovers
1 cup favorite BBQ sauce, plus added hot sauce and vinegar
(if your leftovers are really SAUCY, omit the BBQ sauce, just add some hot sauce and vinegar)
½ can black beans, drained, rinsed and drained again
2 T unsalted butter
Salt and pepper
3 large eggs
1.5 cups Fritos corn chips
½ cup grated cheddar cheese
¼ cup grated pepper jack cheese
3 T fresh cilantro
4 Green onions, thinly sliced

Directions
Combine the pork with ¾ cup of the BBQ sauce, plus hot sauce and vinegar, to make a hot, spicy mixture, in a small saucepan (or microwave). Cook until heated through, about 10 minutes on the stove.

Combine the beans (more if you’re a big fan of beans—I’m not!), with ¼ cup BBQ sauce, a splash of water, and salt and pepper. Cook in a small saucepan or microwave, until hot.

Melt the butter in a medium non stick skillet over medium heat. Crack eggs into the pan and season with salt and pepper. Cook until whites are milky white and the yolks are slightly firm, about 4 minutes.

Take a serving platter and scatter the chips on top. Scatter half the cheese on top, then spoon the pork and the beans over. Sprinkle the cilantro and half the green onions over. Slide the eggs straight over the plate and top with remaining green onions.

To serve, cut in wedges (it really does work! I was shocked!) and serve.

I was looking for the mini bottles of prosecco this weekend and couldn't find them. Figured out afterwards what store I saw them in. Will probably get some before this weekend! <img src="http://www.traveltalkonline.com/forums/images/graemlins/Grin.gif" alt="" />

Prosecco is very sweet to me, I would probably stick with champagne for mimosas. But we also have done "Bear Hug Mango" or "Bear Hug Cranberry" mixed with orange juice and champagne, that combination is quite lovely.

But looking forward to trying that fritos pie recipe. Yummm.

Huhm, I have had a craving for cranberry lately, so I got some cranberry/pomegranite juice over the weekend. Been mixing it with rum and diet soda. Prosecco or champagne sounds better, now I think about it! <img src="http://www.traveltalkonline.com/forums/images/graemlins/Grin.gif" alt="" />

I wasn't sure about the fritos pie, but it came out pretty well.
