Found this simple yet delish recipe the other day, made it for dinner on Sunday:

Bag of Egg Noodles
2 cans Cream of Chicken Soup
1 can Cream of Mushroom Soup
1 lb cooked Chicken, cubed
Salt & Pepper
Splash of Milk
1 Box of Stove Top Stuffing Mix, prepared

Combine the cooked noodles with the next 5 ingredients, spoon into a greased casserole dish and top with the prepared stuffing mix. Bake for approx 1/2 hour at 350 or till the top starts to brown and the edges bubble.

Comfort-o-licious! Next time I may add a few other ingredients, celery and onion would be good + maybe some chopped green chilies.

I have made one similar to this, but with boneless pork chops & canned pork gravy & cream of mushroom soup!
I also add lots of fresh mushrooms & sliced onions & frozen le seur peas...
It IS comfort food!

Here's another one that I'm making for dinner tonight. YUM!!!

NOODLE BAKE

4 cups wide noodles
1 lb. ground beef
1/2 onion, chopped
16 ounces tomato sauce
1 c. cottage cheese
1 c. sour cream
1 tsp. salt
1/4 tsp. garlic salt
1/4 tsp. pepper
1 c. shredded cheese

While the noodles are cooking, brown the ground beef, onion, garlic salt, pepper and salt in a large frying pan. (I use an electric frying pan.) Drain.
Add the tomato sauce, cottage cheese, sour cream to the meat mixture and heat well.
In a large casserole dish, place a layer of cooked noodles on the bottom and top with meat mixture. Repeat.
Top with grated cheese and bake at 350 for 30-minutes or until cheese has melted.

Drain noodles, cover with meat mixture and serve.

This recipe goes back to Mr. Food's earliest days on TV and remains his most-requested chicken recipe.

Ingredients

6 bone-in chicken breast halves, skinned or not up to you

6 (1-ounce) slices Swiss cheese

1/4 pound fresh mushrooms, sliced, optional

1 (10-3/4-ounce) can condensed cream of chicken soup

1/2 cup dry white wine (any one you like will do, have used a white zinfandel because that's what we drink and it tastes vg)

2 cups dry herb-seasoned stuffing mix

1 stick butter, melted

Directions

Preheat oven to 350 degrees. Lightly grease a 9-by-13-inch baking pan.

Place chicken in pan and top each piece with a slice of Swiss cheese. Arrange sliced mushrooms over cheese, if desired.

OK... what do u do with the stuffing mix, butter, cream of chicken soup & wine???

I make basically the same recipe, called "chicken Stuff" in my cookbook.. Easy, quick recipe.

This is a casserole that my mom made when I was young and still remains one of my favorites. It is comfort food to me.

I'm sure it can be made a bit healthier with ground turkey and low fats on the dairy products.

Aunt Martha's Company Casserole


Ingredients:
2 lbs Ground Beef
1 12oz pkg Farrafale or Butterfly Noodles
1 8oz pkg Cream Cheese
1 8oz pkg Small curd Cottage Cheese
1 8oz pkg Sour Cream
1 small Onion, Diced
3 8oz cans Tomato Sauce
Grated Parmesan Cheese

Preparation:
Cook Noodles and cool
Combine Cottage Cheese, Cream Cheese and Sour Cream
Brown Ground Beef with Onion
Add Tomato Sauce to meat and simmer for a bit.

In a greased casserole dish, layer noodles, cheese mixture and meat mixture.
Top with Parmesan Cheese

Bake 325 degrees for 30-40 min, until cooked thru and cheese is melted.
