Sole Meuniere

Sole Meuniere - 02/07/2011 11:58 PM

I've mentioned this recipe in another post, but don't think I ever posted the link. I make this fairly frequently, although it really doesn't adhere to my South Beach way of eating with the flour coating and all the butter. Still, it really is a delicious and elegant dinner. I usually use flounder since sole isn't something that we ever see in the grocery stores around here. Had it for dinner tonight with some steamed asparagus and brown rice blend. The entire meal took me about fifteen minutes to make.

L..I like her simple and elegant recipes, but not the high saturated fat content of many, so I don't cook them often. I once made this one with half butter and half olive oil and it just wasn't the same.
