we enjoyed this at a church function (buffet) and could never find out who made to get recipe. Delicious dish. Recipes and ideas appreciated.

Here's anoter.

Vietnamese Cole Slaw

11 oz. Chinese cabbage, finely shredded
3 stalks celery, finely sliced
1 med. carrot, cut into fine matchsticks
1 1/2 tbs oil
2 tbs shredded Vietnamese mint
1 tbs chopped garlic chives
1 tbs crisp fried onion

Dressing:
4 tbs rice vinegar
2 tbs castor sugar
1 tbs fish sauce
1 tbs lime juice
1/2 tsp salt
1/2 tsp freshly ground black pepper
1 med onion, finely sliced

Place the dressing ingredients in a small bowl and toss well to combine. Let stand at least 20 minutes so the onion absorbs the flavours.

Place the cabbage, celery, carrot, oil in a large bowl. Pour dressing over and toss well. Place on serving dishes and scatter over the mint, chives and crisp fried onion.

I'm thinking that the church ladies use a recipe more like this:

CABBAGE/RAMEN NOODLE SALAD

□ 1 pkg. chicken ramen noodles
□ 5 to 6 c. shredded cabbage
□ 1/4 c. green onions
□ 2 tbsp. sesame seeds
□ 1/2 c. slivered almonds (browned)

DRESSING:

□ Flavor pkg. from noodles
□ 3 tsp. vinegar
□ 2 tsp. sugar
□ 2 tsp. oil
□ 1/2 tsp. pepper

Crush noodles slightly, put in colander and pour 1 cup boiling water over the noodles to soften. Drain well. Mix all salad ingredients except almonds. In a covered glass combine dressing ingredients. Shake well and pour over salad. Stir until evenly coated. Add almond and chill 2 to 3 hours before serving.

I use this same recipe, but with 2 pkgs. broccoli slaw in lieu of cabbage. So Good!

Anon, castor sugar is a very, very fine sugar that dissolves very rapidly. Supposedly you can make your own by putting granulated sugar in a food processor and whirring for a few seconds. Never tried that. I believe I got mine from King Arthur's web site. But I have made the recipe using granulated sugar. Seems to work ok.

Annie,
I learned from the ladies at Uncle Ernie's to use honey instead of sugar. That's how they make their stupendous cole slaw.
Tried it and it worked.

Foodnetwork's Guy Fieri has a great recipe for Asian slaw on their site I've made several times. He adds fried noodles for crunch. Yummy.

Annie,
I made your slaw recipe a couple weeks ago and we really enjoyed it. I made it again this weekend and turned it in to a main dish by adding shredded poached chicken, fresh bean sprouts and peanuts. I served lime wedges and Sriracha sauce on the side. Just thought I would share my variation.

Deb, glad you enjoyed it! Funny thing is the recipe does have chicken in it but I only use the cole slaw portion. I'll have to try it with the chicken the next time. Your variation sounds wonderful!

OMG, Brian I found them too at the supermarket in the produce isle and am addicted to them! Have you tried the Mexican flavored one? It's lower in calories and WW points so it's even better for me.
