Blueberry Season :-)

Blueberry Season :-) - 06/27/2011 02:00 AM

Hi all! Some may not care for blueberries but we do! and this is the first season we've had access to blueberry fields where we can pick our own. And we have picked a ton for the freezer! So far, our favorite recipe is the EASIEST (other than just tossing them in any green salad) & most DELISH (and perhaps most unhealthy?) I'd love more ideas to use these little gems!

In a 9x13 dish, put:
2-4 cups fresh berries
1/2 cup sugar
sprinkle of cinnamon

Pour one box yellow cake mix over and top with a stick of butter/margarine in pats (no need to melt)(I try very hard NOT to use the whole stick..)(but usually do..)

Bake 400' for 30 minutes (while you are eating dinner!)

Top with ice cream (well of course!)

Some call it "Dump Cake", some call it "Blueberry Crisp", some call it "Cobbler". I call it Ridiculous Good.

That sounds real good, quick and easy! I would also add lemon zest to the berries. Our favorite summer fruit. By the way, how do you freeze blueberries?

To freeze...
freeze individually, meaning on a sheet pan in the freezer, in one layer...
when frozen, then put in a freezer baggie, or better yet, foodsaver pouch... and right back in the freezer...
we don't have much room in our little freezer in the garage, so I can only do one sheet pan at a time...
If you freeze them in a baggie right off the bat, all you get is a big blob of blueberry goo...

They are going for $2/pint at IGA on LI now, which is CHEAP for IGA... (Big, Fat South Jersey blueberries!)...
(which is one of the more expensive supermarkets around Eastern LI)...

We are not very far from those Big, Fat South Jersey blueberries, may take a ride and go and pick some or just but them at the stands. Thanks Brian for the freezing tip!

That tip works very well for all types of berries. It is the best way to freeze berries unless you are freezing to make jam and then there is no need to separate.

Yeah, the "blob of goo" works just fine for preserves!
