      #998953 - 04/25/09 12:29 PM (67.162.173.101)

Thought I would re-post this as the post did expire a long time ago.

--------- Recipe via Meal-Master (tm) v8.03

2 lb Lean ground beef
2 cn Kidney beans
1 cn Crushed tomatoes (28oz)
2 lg Onions, chopped
3 Garlic cloves, chopped
1 Green pepper, chopped
3 tb Chili powder
2 tb Sugar
1 tb Crushed red pepper
3 tb Red wine vinegar
1 ts Ground cumim
Salt and pepper to taste
Shredded cheese -optional
Sour cream - optional

In non-stick skillet heat oil and saute onions until wilted, about 5 minutes. Add garlic and saute for 2 minutes more.
Transfer onions and garlic to large Dutch oven or stock pot.
Add ground beef to skillet (in batches) and brown, transferring to Dutch oven when finised.
Add tomatoes, peppers, vinegar, sugar, salt, pepper and spices to Dutch oven. Heat to boiling, lower heat and simmer for about an hour.
To serve ladle into bowls and top with shredded cheese and zap in microwave to melt cheese or run under broiler. Add a dollop of sour cream if desired.

Enjoy!

Hi Annie,

This must be a good (and easy!) recipe for it to be requested again. Could you just verify what size kidney bean cans? I am copying the recipe to take with me to SXM in a couple of weeks as I am cooking dinner for a few friends and it sounds like I will be able to make it the night before and enjoy the whole next day in the sun! Thank you so much!

We have made this chili a couple of times and it is GREAT! We halve everything, as we are only two people. We use 1 regular 15 oz size can of beans.

What Carol said about the size of the kidney bean can.
And Carol you can make the full recipe and freeze a portion of it. It does freeze very good. I have some in the freezer now that I made last month. And boy do I love my vacuum sealer!

If you were to make this in a crockpot, how long would the cooking time be? And on High or low?
Thanks
