A little fish knowledge I have learned cooking in the islands the last 15 years or so. I am in coastal Texas now, and we have an abundance of awesome local fish

The Caribbean is not loaded with pelagic fish. Much of the Mahi and Grouper you see actually comes frozen from Mexico or the South Pacific as noted above.

Bass, specifically Sea Bass, is a generic term, not a defined fish. Grouper, Ocean Perch, Toothfish, and others are commonly sold as Bass. The factory boats are pretty good at getting it frozen quickly. "Chilean Sea Bass" is a restaurant term that used to be Patagonian toothfish. Lots of other fish being sold as Chilean Sea Bass today.

If you see a particular fish printed on the menu, it is not likely local.

The local guys catch Mahi, Kingfish, some tuna, Mackerel, Amberjack, snapper, jacks and others.

Lionfish have become popular but they and other reef fish have a likelihood of carrying Ciguatera, a nasty disease in humans.
