Liz--I really don't understand the reluctance to rent a car, as you will miss much of what is so great about SXM. But I think that Royal Palm would be a great option for you. You can walk to many places from there. The beach there is not great, but the views are beautiful there. You can get a taxi to other beaches or perhaps rent a car by the day. Enjoy!!
