Dr. Jane's Eggplant/Avocado 'Caviar'
1 Large Can Diced tomatoes w/basil & garlic
1 Large Diced Avacado
1 Large Eggplant, diced and cooked in olive oil
2 Cloves crushed garlic or Garlic powder equiv.
2 Tbsp. Capers
1 Tbsp. Hot Sauce ( a little at a time to taste)
1 Tbsp. Cilantro, optional (she didn't put it in )
Mix all above ingredients together and refrigerate for 3 hours or overnight to let the flavors meld.
Serve with crackers or corn chips
