Since I've received a few requests for this I thought I'd post it once again!

Contessa's Apricot Rum Cake

Ingredients:
1 pkg yellow cake mix ( I use Duncan Hines but any will do)
4 large eggs
3/4 c oil (I've been using Smart Balance w/Omega 3. I figure, if you're going to eat cake you might as well add something healthy! <img src="http://www.traveltalkonline.com/forums/images/graemlins/jester.gif" alt="" />)
3/4 c Apricot nectar

Rum Glaze
1/2 c butter
2/3 c confectioners' sugar
1/3 c rum

Combine cake mix, eggs, oil and apricot nectar and beat well with mixer. Pour into lightly greased and floured tube pan and bake for 50 minutes at 325 F. Cool.

Meanwhile, combine butter, sugar and rum in saucepan and bring to a boil. Use fork to poke holes in cooled cake. Slowly pour glaze over top and sides.
YUM!!

We get more requests for this cake whenever we go somewhere pot luck!
All our friends love it!
It's usually all gone before the rest of the food has been served...
also great if you use a Devil's Food Cake mix!

I like to dust the top with confectioners sugar after the glaze has been all applied, for presentation...
