I tasted a broccoli salad recently that was not made with mayo. The dressing was made with evaporated milk and it was really tasty. Does anyone happen to have this recipe? I don't know what any of the other ingredients are.

Evaporated Milk Dressing

This is especially good on cabbage slaw or broccoli slaw.

1/2 cup granulated sugar


1/3 cup vinegar
1/2 cup evaporated milk
1/2 teaspoon salt

Add sugar to vinegar and stir until sugar has dissolved. Beat in milk until mixture thickens. To use for slaw, pour over slaw. Use a fork to blend dressing through shredded cabbage or matchstick broccoli.

Though this has mayo in it (skinny cooks can't be trusted!), if you've never had this salad, you're in for a treat!!!

Broccoli/Craisin Salad

Dressing:
1 cup mayo
1/2 cup sugar
2 T. apple cider vinegar

Mix in small bowl or jar. Best if made a few hours ahead or even the night before, however, it's pretty darn tasty if made even an half hour ahead.

Salad:
2 lbs. broccoli florets (or two small bags of Broccoli Wokly-can be found at Ralph's)
1 6-oz. bag of craisins (Cherry Flavored or Original)
1 lb. bacon, crumbled
1/2-1 cup diced red onion

Mix with dressing just before serving.

I wonder if you could sub Splenda for the sugar with decent results....might try that soon.

If you try this, please post your opinion on the results. I used raw sugar and it was great.

I am also wondering how it would be with nonfat evaporated milk.

I haven't tried it with this recipe, but anytime I have substituted nonfat evaporated milk in any other recipe, it's been awful!
