As a scuba diver I have seen squirrel fish many times. They are plentiful. They are red, have big eyes and like to hang out under ledges and corals. I have no idea though if they are on menus however.

Lots of squirrel fish at all the sites I have dived in around St Maarten. Very common fish but since it is a local reef fish I would be apprehensive due to the possible toxicity in the fish. https://www.bing.com/images/search?q=squ...amp;FORM=IARRSM

A friend, also a scuba driver, had it in Guadeloupe at a small beach front resturant. Said it was wonderful

Yeah, eating any reef fish is a bad idea - Ciguatera Toxin is a possibility in all of them.
