Great for a fall day! Apples and Cheddar go great together! YUMMMMM!

[color:"blue"]Apple-Cheddar Bread[/color]
Ingredients
2/3 cup white sugar
2 cups self-rising flour
1 teaspoon ground cinnamon
1/2 cup chopped walnuts
2 eggs, beaten
1/2 cup margarine, melted
2 Granny Smith apples - peeled, cored and finely chopped
1/2 cup shredded Ex-Sharp Cheddar cheese
1/4 cup milk

Directions
1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.
2. In a large bowl, combine the sugar, flour, cinnamon walnuts, apples, and cheese.
3. Add the eggs, melted butter or margarine, and milk; stir until well blended. Pour into prepared loaf pan.
4. Bake in preheated oven for 1 hour, or until done. If loaf starts to brown too much, cover with foil.

Yummy, I'm making this tonight. Just bought a bag full of granny smith apples. Thank you.

Brian, I am always disappointed with the extra-sharp cheddar available in local supermarkets... what brand do you buy?

Not Brian, but I like the Cabot Extra Sharp White Cheddar.

Our local Stop & Shop gets their own NY Cheddar, and cuts it up and then wraps it... Very Good...

Much better and a lot cheaper than name brands...

I do like Cabots Horseraddish Cheddar...

Used to love the Stop & Shop Extra Sharp NY Cheddar. One of the very best! And the horseradish cheddar? YUM!

Here on island we finally found a really nice aged sharp cheddar in Cost U Less.

A second vote for the cabot extra sharp! Also like hellavagood cheddar - favorite is from Shelburne farms but not widely available in most grocery stores

i also like helluva good cheese. i graduated with the son of the previous owner; i believe they sold the company to his uncle and now operate yancy's fancys. however, i'll third the cabot suggestion as being one of the better cheddars that most local grocery stores carry. the seriously sharp is even better than the extra sharp.

i don't see why not. i have frozen corn muffins, banana muffins, etc with success. there's always some stocked in my freezer and whenever i crave one i take it from the freezer to the oven and put it in at 350 for 10 or so minutes (small muffins); you'd have to adjust your time accordingly. goodluck.
