Ingredients 2 cups uncooked elbow macaroni 4 tablespoons butter 1 teaspoon salt 1/2 teaspoon black pepper 1/2 cup sliced green bell pepper 1/2 cup sliced red bell pepper 1/2 cup coarsley choped onions 1/4 tsp. cayenne (or more, up to you) 3/4 cup heavy cream 1/3 cup all-purpose flour 1/2 cup plain yogurt 1 cup crumbled blue cheese (also like Gorgonzola or we get a Bleu/Brie Cheese that is made locally that's really good in this) 1/2 cup grated Parmesan cheese (Crumbled Bacon, optional)
Directions 1. Bring a large pot of lightly salted water to a boil. Add macaroni and cook for 8 to 10 minutes or until al dente; drain. 2. Meanwhile, in a medium saucepan over medium heat combine butter, cayenne, salt, onions, pepper and bell peppers. Cook over medium heat until onions are opaque. 3. stir in the flour and make a roux. 3. Stir in cream, yogurt, bleu cheese and Parmesan cheese. stir until hot and all the cheese is melted and gets bubbly. 4. Stir cooked macaroni into cheese mixture and serve hot.

Hey Brad... I love, for Thanksgiving Day leftovers... adding some Bleu Cheese (or Gorgonzola) and a little dry sherry to the leftover gravy, and heating up some leftover turkey in it! YUMMMMM!!! It really IS GOOD! Smoky and sharp! Not too much Bleu Cheese and/or sherry... add a little at a time (or it will overpower), and keep tasting it as you add... You will know when it is right...
