I remember reading on here months ago about a food truck at Sapphire Beach called Off the Grid. Is it still there? My sister is there right now!

They are closed until October. The owners went to Big America to open a restaurant up there.

Off The Grid posted on Facebook that they are reopening Oct 13th at 11am. New hours are 11am-7pm, seven days a week. They have a new smoker and some new items including pork belly and eggs brunch on Saturday and Sunday, pulled pork sandwiches, smoked chicken wings... Yum!
