Caneel Bay resort has seven beautiful beaches within their own property. Each beach has something different to offer. Scott Beach is best for turtle sightings, Caneel Beach for angelfish, Turtle Beach for parrotfish, etc. I'd spend one day just relaxing and enjoying the beauty found there. Then the next day, I would definitely hire an open air taxi for an island tour. That will enable you to see all the other gorgeous beaches like world-reknown Trunk Bay. I would not rent a car as you really don't have a whole lot of time to explore the island and the roads can be very tricky if you are unfamiliar with the hair-pin curves and steep hills. Taxis are relatively inexpensive and you can always get one to go into Cruz Bay if you choose to eat dinner in town.
