One of my co-workers just loves to bake.
It was going to be another snowy messy Monday in DC area so she decided to cheer us up. Not very Irish, but OH MY!

She took on a challenge this weekend and brought to work

I think the recipe is in Southern Living a few months ago

1 layer of Red Velvet Cake
1 layer of White Chocolate Cheesecake
1 layer of Red Velvet Cake
1 layer of White Chocolate Cheesecake
1 layer of Red Velvet Cake
All topped with 8 oz of White Chocolate, 32 oz Sugar, 1 stick of butter mixed into an icing from hell

Well I can tell you when I was eating the cake I thought I was in heaven, but after a hour or two when the sugar fix fell out I thought I was in hell.

The bad thing about a cake likes this is it is soooooooo big that even if you get a sliver it is still a big hunk of cake.

But it sure was good.
