Rum pancakes: follow the pancake recipe on a box of Bisquick except replace liquid (I think it calls for milk) with 1/2 cup of rum and 1/2 cup of coconut milk. Cook as directed on package.

Coconut syrup:
1 can coconut milk
3/4 cup brown sugar
2 tbsp corn starch
Mix all ingredients in a saucepan and cook over medium heat till mixture boils. Serve over pancakes.

I made both of these on board our charter boat last week. Pretty simple to make a special breakfast on board. Extra credit if you have bacon on the side <img src="http://www.traveltalkonline.com/forums/images/graemlins/Grin.gif" alt="" />

Made these for breakfast today and I have only one thing to say, yummmmmmm! Had to cut the recipe since I'm the only pancake eater. Syrup turned out too thick, but that can be fixed easily.
