Rum pancakes: follow the pancake recipe on a box of Bisquick except replace liquid (I think it calls for milk) with 1/2 cup of rum and 1/2 cup of coconut milk. Cook as directed on package.

Coconut syrup:
1 can coconut milk
3/4 cup brown sugar
2 tbsp corn starch
Mix all ingredients in a saucepan and cook over medium heat till mixture boils. Serve over pancakes.

I made both of these on board our charter boat last week. Pretty simple to make a special breakfast on board. Extra credit if you have bacon on the side <img src="http://www.traveltalkonline.com/forums/images/graemlins/Grin.gif" alt="" />

Made these for breakfast today and I have only one thing to say, yummmmmmm! Had to cut the recipe since I'm the only pancake eater. Syrup turned out too thick, but that can be fixed easily. Again like I said, yummmmm! <img src="http://www.traveltalkonline.com/forums/images/graemlins/Clapping.gif" alt="" />
