Remember my ingredient emergency a couple of days ago when I opened the wrong can of beans? Here's the meal that resulted from my mistake, and it was really delicious!



Red Beans and Rice

Recipe By :Georgia
Makes 2 Generous Servings


Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 tablespoon olive oil
1/2 large onion -- diced
2 cloves garlic -- minced
1/2 bell pepper -- diced
1 1/2 links Andioulle sausage -- diced
1/2 teaspoon crushed red pepper -- or to taste
1 tablespoon creole seasoning
1 teaspoon cumin
1 can diced tomatoes
1/2 cup brown rice
1 cup water
1 can kidney beans -- rinsed and drained
1/2 teaspoon salt

Heat the oil in a pan large enough to hold all of the ingredients.

Add the onion, garlic, bell pepper, and sausage, and saute until the onion is translucent.

Add the crushed red pepper, creole seasoning, and cumin, and stir a minute or so.

Add the remaining ingredients, stir, and bring to a boil.

Cover, reduce heat to very low, and simmer for 50 minutes to an hour, or until rice is cooked. If you use white rice, this will not take as long, but the brown rice is delicious and makes the dish much healthier.

Annie, I'm not sure how authentic this recipe is, since I just made it up as I went along. I found the andioulle right in my regular grocery store, next to the kielbasa.

There can be nothing wrong with any recipe that has andouille in it. One of my top three favorite foods/ingredient.
Some day make a wet beer batter and just try frying some andouille pieces and then make a dipping sauce with one part dijon mustard three parts salsa

I think chorizos can be substituted for andouille and seems more available in my neighborhood, but when you put beans and rice in the same sentence, count me in.
