These are really excellent! perfect for Christmas...

[color:"blue"]Canadian Maple Cookies[/color]

[color:"green"]Ingredients[/color]

o 1 cup unsalted butter, softened
o 1 cup brown sugar, packed
o 1 eggs
o 1 cup real maple syrup
o 1 teaspoon vanilla extract
o 4 cups all-purpose flour
o 2 teaspoons baking soda
o 1/2 teaspoon salt
o 1/3 cup granulated sugar
o chopped pecans or walnuts (optional)

1. Preheat oven to 350 degrees Fahrenheit.
2. Grease several cookie sheets. (I use parchment paper)
3. In a large bowl, cream butter and brown sugar; add egg, maple syrup and vanilla, mixing until well blended.
4. Sift or whisk together flour, baking soda and salt; add this mixture to creamed mixture and stir until well blended. mix in chopped nuts, if desired.
5. Shape into 1 inch balls and roll in sugar.
6. Place balls on cookie sheets about 2 inches apart and flatten slightly.
7. Bake 8 to 10 minutes; remove and let cool on a wire rack.

NOTE: for a thicker, plumper cookie, refrigerate dough for about ˝ hour before cooking… for a flat cookie, use ingredients at room temperature…
