I've never seen cracked conch on SXM. In the Bahamas and T&C they generally cook their conch over quick heat rather than longer heat. I will suggest an alternative--the grilled conch at Caribbean Blend. It's grilled over charcoal while being basted in an herbed butter sauce. Much as I prefer Bahamian and T&C style of cooking conch, I like this particular grilled version better. And next door, they have conch in a garlic wine sauce that's amazing. Still looking for a conch salad like they served at L'Escargot, though.
