I've come to realize conch is one of, if not my all time favorite food. I mean mind bending. it's really strange.

I agree, they are tasty. Seems like an awful waste to destroy the confiscated conch. Makes no sense that the reason they control them so strongly is because they are endangered, then they destroy (waste) the ones that are confiscated. What about a big "Conch Festival", where the confiscated items are prepared, and charge a nominal fee to sample them. Then use the money collected to further the cause of protection of endangered marine species?

I think it's fairly universal, that if something like this is seized, that it is destroyed.

I have loved peppery conch chowder since trips to Florida in then70's. Your post led me to google conch only to find they are giant ocean snails. I have had escargot only 2-3 times. Never had straight up conch. I suspect I'll still,partake in conch chowder. <img src="http://www.traveltalkonline.com/forums/images/graemlins/dine.gif" alt="" />

Try the Conch Fritters too, they remind me of spicy hushpuppies.

I agree it does seem like such a waste, in Maine if something is illegally caught or poached they take there catch or kill to a homeless shelter or to people in need. I don't know if they have homeless shelters in St Martin but there must be plenty of people that could use the conch.

I do agree it's a waste to destroy them. Give them away to the poor.
