Here's a good one I have used in the past...
Ingredients 4 cups sliced yellow squash 1/2 cup chopped green onion 35 Ritz Crackers, crushed 1 cup shredded Cheddar cheese 2 eggs, beaten 3/4 cup milk 1/4 cup butter, melted 1 teaspoon salt 1/2 tsp. nutmeg ground black pepper to taste 2 tablespoons butter
Directions 1. Preheat oven to 400 degrees F (200 degrees C). 2. Place squash and onion in a large skillet over medium heat. Pour in a small amount of water. Cover, and cook until squash is tender, about 5 minutes. Drain well, and place in a large bowl. 3. In a medium bowl, mix together cracker crumbs and cheese & nutmeg. Stir half of the cracker mixture into the cooked squash and onions. In a small bowl, mix together eggs and milk, then add to squash mixture. Stir in 1/4 cup melted butter, and season with salt and pepper. Spread into a 9x13 inch baking dish. Sprinkle with remaining cracker mixture, and dot with 2 tablespoons butter. 4. Bake in preheated oven for 25 minutes, or until lightly browned.

Squash Casserole
2lbs yellow squash 1 can cream of celery soup 1 stick butter 1 medium onion,grated coarsely 1 large carrot shredded (optional) salt and pepper to taste 1/2 cup grated sharp cheese 1 8oz carton sour cream 1 beaten egg 1 cup herb seasoned stuffing crumbs
Mash cooked and drained squash.Add remaining ingredients. Put into greased casserole. Top with another 1/2 cup crumbs mixed with 2 Tbsps. butter. Sprinkle with paprika. Bake 350 ,30 minutes
High calorie for a veggie. But it's good and it's Christmas! Love Edisto! Our family has summered there for 50 plus years!

Remember there are no stupid questions... <img src="http://www.traveltalkonline.com/forums/images/graemlins/Smile.gif" alt="" /> I know what yellow crook neck squash is, in the NE we usually see it in the summer aka yellow summer squash, but I am curious, what is yellow squash? <img src="http://www.traveltalkonline.com/forums/images/graemlins/thanks.gif" alt="" />

A little late on this one, but I love this recipe:
SQUASH CASSEROLE
** I double this recipe for a party and use a 9 X 13 size dish**
1 lb summer squash, sliced 1 medium onion, chopped (Vidalia or other sweet onion is great in this) ¼ tsp salt ¼ cup butter, melted 1/8 tsp pepper 1 TBSP sugar 2 eggs, beaten ¼ tsp soy sauce ¾ cup grated cheddar, divided ½ cup cracker or bread crumbs, divided 1/8 tsp paprika
Grease 1 ½ quart casserole. Cook squash, onion, salt on stove top until very soft. Add to butter, pepper, sugar, eggs, soy sauce, grated cheddar (1/4 cup) and ¼ cup bread crumbs. Bake 20 minutes. Top with rest of cheddar, rest of bread crumbs and paprika. Bake 10-15 minutes more.
... Looking at the recipe, I don't think I always use the sugar when I use Vidalia onions- they are so sweet. I don't remember putting sugar in the last few times!
