I think this will be in my New Year's Eve / Day meal planning somewhere.

1/4 cup packed brown sugar
2 T. rice wine vinegar
2 T. maple syrup
ground black pepper
1 lb. thick cut bacon

Preheat oven to 350 degrees.

Mix brown sugar, rice vinegar, maple syrup & black pepper
in a small bowl.

Place bacon slices on cooling rack set over a baking sheet.

Bake in preheated oven for 10 minutes, turn slices, and bake for another 5 minutes.

Remove bacon and brush both sides with brown sugar mix. Return to oven and bake another 5 minutes and repeat to baste every 5 minutes or so. Cook until bacon is browned and crisp, 40 minutes or so.

Will feed as many people as 1 lb of bacon will feed, but it will go fast. Definitely need thick bacon for this.

Interesting. Have never thought of those combinations. But does sound interesting.

Sounds sweet, not a bad thing, but not what I would consider with bacon.

Interesting to try.

I have had it before, and added more maple syrup than what this recipe called for, but it was really good. I don't think I had any rice vinegar first time I tried it, and it was still really good.

I had chocolate covered bacon at a recent party. It was great!

Just made some chocolate covered venison jerky, and the sweet/salty taste is good together, but the chocolate was too thick!
