I add the gorgonzola a little at a time... let it incorporate, taste, and add more if needed...
You'll know when it's right by tasting between each addition...
and no it's not too salty... that's why I use gorgonzola instead of blue cheese...
I think Blue has more salty taste... I think the original recipe I found for this used BC...
